Broccoli Cheese Soup

3 cups broccoli cuts
1 14 oz can Swanson's Chicken Broth
1 Tbsp minced onion
1/4 tsp pepper
3 1/4 cups milk
2 tsp cornstarch
6 oz Velveeta cheese

Bring broccoli, broth, onion and pepper to a boil. Reduce heat to low, cover and simmer 8-10 minutes. Process in blender. Add 3 cups of the milk. Bring to a boil. Stir cornstarch into 1/4 cup cold milk and add to soup. Simmer 1 minute. Stir in cheese until melted.

Can also use broccoli, cauliflower, carrot mixed vegetables.
