Corn Bread
1 Cup Yellow Corn Meal
1 Cup All Purpose Flour
1/4 Cup Sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 Cup Milk
2 Eggs
1/3 Cup Vegetable Oil (You can use melted butter if you like.)
Instructions:
Preheat the oven to 425F.
Preheat a well seasoned, 9" cast iron skillet, in the oven while it is heating up.
Mix the dry ingredients together in a bowl. Mix the wet ingredients together in another bowl. Stir both mixtures together until just combined. Don't stir too much.
Take the hot cast iron pan out of the oven, and lightly grease it with butter, oil, or Crisco. Pour the cornbread mixture into the pan and return it to the oven.
Bake for about 20 minutes, or until golden brown.
