Loaded Potato Salad

3 lbs. Gold or Red Potatoes
1 Cup Chopped, Cooked, Bacon (5-7 pieces)
1 1/2 Cups Shredded Cheese (Cheddar)
1 Cup Sour Cream
1/2 Cup Mayonnaise
3 Green Onions, sliced and chopped
1 Handful, Chopped Fresh Parsley
Salt and Pepper to taste

Boil the potatoes and cut into chunks. Combine all ingredients together. Refrigerate until cold.
