Just like Mom made...

Quiche Lorraine

9 inch pie shell

6 oz Swiss cheese, grated
8 slices bacon, cooked and crumbled
3 eggs
2 cups evaporated milk
1/2 tsp dry mustard
1/2 tsp salt
1/4 tsp pepper
Chives
Dash of cayenne pepper

Prepare 9 inch pie shell. Sprinkle Swiss cheese and bacon bits into shell. Beat eggs, slightly; add milk, dry mustard, salt, pepper, chives and cayenne pepper. Mix well. Pour over bacon and cheese. Bake 375F for 45-60 minutes or until firm. Serve hot.
