Just like Mom made...

Zucchini Bread

Dry:

3-1/2 Cups All Purpose Flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon baking powder
1 Tablespoon ground cinnamon

Wet:
3 Eggs
1 Cup vegetable oil
1-1/2 Cups white sugar
3 teaspoons vanilla extract

2 Cups grated zucchini

Preheat oven to 325F to 350F.
Mix dry ingredients together in one bowl.
Mix wet ingredients together in another bowl.
Mix the grated zucchini into the wet ingredients.
Mix the dry ingredients into the wet ingredients.
Fill two greased and floured 8" x 4" pans.
Bake for 40 to 60 minutes, or until done.
